Vegetable Noodle Soup
- 2 onions
- 1.5 L mineral water
- 1 garlic clove
- 1 pack of Konjac noodles
- 200gr dried shiitake mushrooms
- 1 teaspoon of powdered ginger
- 1 teaspoons of powdered coriander
- 2 teaspoons of no-sugar added, reduced sodium soy sauce
- 1 tablespoon of extra virgin olive oil
Drain the Konjac noodles and rince them with cold water. Bring a pot of water to boil. Cook the Konjac noodles in the boiling water for 1-2 minutes then drain them again. Keep them to the side.
Cut the onions into small pieces. Sautée them in a pan on low heat with a touch of olive oil. Add 1.5 L of boiling water to the onions. Add the shiitake mushrooms cut into small pieces, salt, spices and soy sauce.
Peel and press the garlic then add it to the mixture. Add the Konjac noodles, turn off the heat and cover the pan for 5 minutes.
Serve in two small bowls with a poached egg for each portion.
Konjac Marinated Chicken Shiitake
- 1 pack of Konjac Shirataki
- 300 grams of turkey escalope
- 1 garlic clove
- 1 onion
- Shiitake mushrooms
- 1 tablespoon extra virgin olive oil
Soy sauce (reduced sodium, no sugar added)
Drain the Konjac noodles in a strainer and rince them with cold water. Bring a pot of water to boil. Cook the Konjac noodles in the boiling water for 1 to 2 minutes then rince them again. Keep to the side.
Dice the turkey escalope into small cubes.
Peel and cut the garlic clove in slices. Finely chop the basil. Cut the onions and mushrooms into fine slices.
Prepare the marinade in a deep dish: combien the soy sauce and sesame oil. Add the shiitake mushrooms and diced turkey then let marinate for 20 minutes.
Heat 1 tablespoon of extra-virgin olive oil in a wok. Add the sliced garlic and onions and sautée until tender. Add the mushrooms and diced turkey. Stir the mixture while adding the chopped basil on high heat for 3 minutes. Add the spices of your choice. Finally, add the noodles. Cook for 2 minutes on high heat and serve hot.
Recipe details: The shiitake mushroom is a very flavourful black mushroom. Its original flavor is appreciated in China and Japan. The shiitake mushroom contains a strong amount of vitamins and minerals and active compounds such a polysacchardie lentinan which contains cancer-fighting properties. Even though studies are still being conducted on this ingredient, you lose nothing by trying this delicious mushroom bursting with valuable nutrients.
Konjac Chocolate Rice Cake
- Konjac noodles
- Soy milk
- 3 eggs
- 2 tbsp cornflour,
- Vanilla pod
- Dukan Cocoa powder
In a bowl, mix the eggs and milk with a mixer. Heat the mixture and add the vanilla pod. Remove the vanilla and add the cornflour. Continue to stir the mixture on low heat then add a few tablespoons of Dukan Cocoa powder to taste. Add Stevia to taste.
Rince the konjac then add it to boiling water for 1 minute. Rince the konjac in cold water and mix it delicately, avoiding turning it into a purée.
Incorporate the konjac in the chocolate mixture and let it cool. Serve fresh with a few mint leaves.
