This recipe is from the same person as originally posted the recipe for Asian Chicken Soup. Thanks, whoever you are!
Ingredients (for two):
200 gm lean beef steak
50 gm mange tout
salad leaves
½ red onion, sliced
6 cherry tomatoes, halved
75gm cucumber, sliced
Dressing:
2 tsp light soy sauce
1 tsp oil (sesame, ideally, otherwise olive)
1 tbsp freshly squeezed lime juice
1 garlic clove, crushed or chopped very finely
1 tsp fresh ginger root, grated
½ re chilli, sliced thinly, having removed the seeds
Garnish:
fresh coriander, mint and basil - roughly the same amount of each to make a small handful in all
Method:
Mix up the dressing ingredients and leave to one side
Using a small amount of cooking spray, fry the beef for a few minutes on each side. Set aside to rest.
Blanch the mange tout and refresh in cold water
Mix up all the salad ingredients in a large bowl, slice the beef thinly and lay on top.
Add the dressing and garnish.
Nice sounding recipe but if this recipes is for the weight loss phases I would double the amount of beef as you should be eating around 200g for one person as you need to eat AT LEAST DOUBLE THE AMOUNT OF PROTEIN THAT YOU WOULD CONSIDER A NORMAL PORTION so 200g between 2 people just is not enough. Also with the recipe as it is above, the ratio of 1/3 veg to 2/3 protein at meals on PV days isn't happening, but if you double the beef it would be about the right ratio.
