Curried prawns with fresh basil

Preparation time: 30 minutes Cooking time: 5 minutes Serves 2, PP days
Ingredients:
16 Prawns
2 tsp Curry Powder
1 medium Onion - very finely chopped
10 fresh Basil Leaves
Salt & Pepper
Peel the prawns completely if they are not already peeled.
2. Place them in a large bowl and sprinkle over the curry & stir to coat.
3. Let the prawns marinate for 15 minutes in the refrigerator
4. Begin to cook the onions in a non stick frying pan with the cover on for a few minutes. Add the Prawns and brown lightly over a high heat for 1 minute.
5. Add the Basil leaves and stir and cook for a further minute, season with salt & pepper and serve immediately.
