Chicken and goat’s cheese flan

Chicken and goat’s cheese flan

 

Preparation : 10 minutes Cooking : 30 minutes For 6 people PP Phase

 

 

Ingredients

4 slices of chicken ham
4 eggs
1 table spoon of goat cheese flavouring
25 centilitres of low fat Normandy fromage frais
1 bunch of dill 
Salt and pepper

Wash the dill. Put aside few sprigs for the decoration and chop the rest. Put the chicken ham in the mixer. Blend together the chicken ham, eggs, goat cheeseflavouring  and dill. Add salt and pepper to taste. Divide the mixture into oven-proof dishes. Cook in a bain-marie for 30 minutes on gas mark 7. Serve warm.

Norwegian carpaccio

Norwegian carpaccio

 

Preparation : 15 minutes Cooking : 0 minute For 6 people PP Phase

 

 

Ingredients

4 thin slices of smoked salmon
4 thin slices of smoked trout 
4 thin slices of smoked halibut
4 teaspoons of red lump fish roe 
4 teaspoons of black lump fish roe 
4 lemons 
150 mililitres of 3 % fat thick crème fraîche 
1 bunch of dill
Salt and pepper

Squeeze the lemons and pour the juice into a bowl. Beat the cream, with salt, pepper, the chopped dill and half the lemon juice, energetically. Arrange the slices of smoked fish on each plate. Sprinkle with the remaining lemon juice. Put a little of the lump fish roe on top. Lastly pour a generous soup spoon of the crème fraîche over it. Serve chilled.

Turkey rillettes

Turkey  rillettes

Preparation : 15 minutes Resting time : 120 minutes For 6 people PP Attack Phase

Ingredients

500 grams of turkey breast
2 chopped onions
5 chopped gherkins
100 grams of low fat natural yoghurt
Powdered paprika
Nutmeg
Salt and pepper

Brown the turkey in a pan for 5 minutes. Put it in the mixer with all the ingredients (lightly salted) until blended. Put the rillettes in a terrine dish, compress and put in the refrigerator for at least 2 hours.


With Dukan the more you eat the more you lose!

Is it OK to use tofu instead of diary products? Will you please answer becouse in my country is very hard to find non fat cheeses.

Hi georgiav77

You can buy it from the French Dukan website shop (the English shop only sells the cheddar flavour at the moment).  Click on the French flag at the top right-hand side of the UK website (before logging in) and then click on "La Boutique".  Then click on "Aromes alimentaires" and you will find it listed under the heading "Aromes sales" as "Chevre".  Hope this helps.

Thank you for the brilliant recipes!  So nice of you.  I didn't know you could eat onion and gherkins on the attack phase... is there a limit to these?  Are there any other non-meat things you can eat on PP / Attack?  thx Heidi

You need to use Mozilla Firefox to access the Dukan website as Internet explorer etc won't work right.  You can donwload Mozzilla firefox free just google itSmile
